Apple Butter Spice Cake

INGREDIENTS

Topping:
1 cup. packed brown sugar 
1 tsp. ground cinnamon 
1/2 tsp. ground nutmeg 
1/2 cup. chopped pecans
 
Cake:
2 cups. all-purpose baking flour 
1 tsp. baking powder 
1 tsp. baking soda
1/2 tsp. salt 
1/2 cup. butter, room temperature 
1 cup. white sugar 
3/4 cup Cider Keg Apple Butter 
1 tsp. vanilla extract 
1/2 cup. whole bran cereal or wheat germ 
1 cup. sour cream 
2 eggs, room temperature 

INSTRUCTIONS 

Preheat oven to 350 °F (175 °C). Grease a 9 x 13 inch pan 
Prepare the topping by mixing together the; brown sugar, cinnamon, nutmeg, and chopped pecans in a bowl.
In separate bowl, sift together the flour, baking powder, baking soda, and salt.
Beat butter and sugar together in a separate large bowl, with an electric mixer until light and fluffy; add eggs one at a time. Thoroughly beat each egg into the butter mixture. 
Next, add apple butter, vanilla extract and wheat germ or bran cereal. 
Then add sifted dry ingredients alternating with the sour cream. Mix well after each addition of both. 
Once all mixed together, pour half the batter into the prepared pan. Then sprinkle half of the topping ingredients.
Next pour the remaining batter into the pan and top it off with the rest of the topping ingredients.
Bake in the preheated oven for about 40 minutes.
Test the cake by inserting either a tooth pic or a skewer in to the middle of the cake, if it comes out clean, with not batter on it then it is done. If there is still some wet batter on it then it is not done, bake for a bit longer.
